Instructions

Prep

    Preheat your oven to 160°C (320°F). Prepare a pyrex dish.

    Warm your milk. Mix the milk, vanilla, and psyllium husks together and give a good stir with a whisk. The psyllium husks can gel, so just whisk them for 30 seconds to smooth everything out. Set aside for about 30 minutes.

Prepare the apples

    Chop your apples. Toss them with the sweetener and cinnamon until evenly coated.

Make the batter

    Into your mixing bowl with the milk, vanilla, and psyllium husks, add in the yoghurt and oat fibre. Mix well until smooth.

    In another bowl, prepare the dry ingredients. Add the gluten-free flour, cornstarch, sweetener, and baking powder. Stir so it's well combined. Sift if you have clumps.

    Put the wet ingredients into the dry. Fold with a spatula. The batter should be smooth and slightly thick.

Assemble and bake

    Pour the cake batter over the apples. Spread evenly.

    Bake in the preheated oven for 30-45 minutes, or until the top is golden brown. The time varies by oven.
